Joe's Zucchini and Bison Casserole

Delicious and Healthy Dinner Recipe!

Ingredients

4 or 5 narrow organic zucchini

salt

1 cup unbromated, unbleached flour

1/2 cup plus 1 T olive oil

1 small onion, minced

1 ground Bison

1 T parsley, chopped

pinch oregano

1/2 tsp dried basil or 2 large leaves, chopped

6 Tsp grated Romano or Parmesan cheese

Marinara Sauce

3 large basil leaves, chopped

3 large mint leaves, chopped

Directions

Cut zucchini into diagonal slices, about 1/4-inch thick. Sprinkle the slices lightly with salt, then shake in a bag containing the flour.
Put 1/2 cup of the oil into a frying pan, brown zucchini on both sides and set aside.
Heat 1 tbls of oil, add onion and garlic and saute'. Add the meat, season with salt and pepper, add the next 3 ingredients. Brown meat and drain fat. Add 2 tbls of grated cheese. Set aside.
To assemble, use oblong casserole dish. Layer half of the zucchini slices close together, cover with half of the remaining grated cheese and half of the chopped basil. Add the meat and cover with sauce. Make another layer of zucchini slices. Repeat with sauce, cheese and herbs. Bake at 350-degrees for 20 minutes.
