Segment 1 - Nutrition in the News - Blueberries

Good things come in small packages




  • In a study of 18 rats with colon cancer, those fed a diet supplemented with the blueberry compound pterostilbene had 57% fewer pre-cancerous lesions after eight weeks compared to the control group
  • Pterostilbene also inhibited genes involved in inflammation, which is thought to be a risk factor for colon cancer
  • A past study has also found that blueberries are beneficial; when blueberry skins were fed to animals, their cholesterol was lowered
  • It’s thought that pterostilbene may prevent colon cancer by lowering lipids in your body
  • Blueberries are rich in antioxidants called anthocyanins, and are a good source of ellagic acid, which is known to block metabolic pathways that may lead to cancer. There are 30 different blueberry species native to North America


Segment 2 - Debunking the Myth - Get Your Fever Down!

Could a Little Fever Be a Good Thing?

  • Myth- First sign of fever, GET ER DOWN! Instead, fever is a way for the body to heal
  • For some illness a fever allows the body to kill the invader
  • In young adults (under 18) aspirin is never a good idea. Use Tylenol instead
  • fA fever is a natural mechanism of healing. Stay home, do not spread your illness (many take Tylenol, go to work or school when infectious), and your body will heal


 

Segment 3 - Joe's Zucchini and Bison Casserole

4 or 5 narrow organic zucchini
salt
1 cup unbromated, unbleached flour
1/2 cup plus 1 T olive oil
1 small onion, minced
1 ground Bison
1 T parsley, chopped
pinch oregano
1/2 t dried basil or 2 large leaves, chopped
6 T grated Romano or Parmesan cheese
Marinara Sauce
3 large basil leaves, chopped
3 large mint leaves, chopped

Cut zucchini into diagonal slices, about 1/4-inch thick. Sprinkle the slices lightly with salt, then shake in a bag containing the flour.

Put 1/2 cup of the oil into a frying pan, brown zucchini on both sides and set aside.

Heat 1 tbls of oil, add onion and garlic and saute'. Add the meat, season with salt and pepper, add the next 3 ingredients. Brown meat and drain fat. Add 2 tbls of grated cheese. Set aside.

To assemble, use oblong casserole dish. Layer half of the zucchini slices close together, cover with half of the remaining grated cheese and half of the chopped basil. Add the meat and cover with sauce. Make another layer of zucchini slices. Repeat with sauce, cheese and herbs. Bake at 350-degrees for 20 minutes.


Segment 4 - How to Buy Apples

The Key word is "organic"

  • There are more than 7,000 types of apples worldwide, so they say
  • Organic apples don’t look like grocery store apples. They are typically smaller, less shiny, and have blemishes
  • The soil that the tree is grown in determines if the apple is organic
  • If the soil has been treated with insecticides or pesticides or if the tree has been sprayed with chemicals it cannot be organic
  • Organic apples are not waxed
  • Waxing apples compromise the fiber from the skin as well as locking in the harmful chemicals of the insecticides and other chemicals
  • Apple Pie – If you use organic apples and butter, sprouted-wheat crust, and don’t add any processed sugar but perhaps sprinkle a little brown sugar on top after it is cooked, you have a very healthy desert


Segment 5 - Healthy Habit - Don't Eat After 7:00 PM

  • After 7:00 PM try not to eat anything at all. However, if you do, eat an apple with the skin or eat some seeds.
